Savigny-lès-Beaune Les Lavières

This 2.6 hectare parcel was planted in 1956. Its climate, ‘Les Lavières’, comes from the word lava, which here refers not to volcanic stone, but to the large slabs of hard limestone that were once used to cover the roofs of our houses. This vineyard is located mid-slope, facing south. The soil is clay on the surface, with the famous limestone at a depth of around 30/40 cm.
It is this limestone that gives the wine its strong minerality on the palate, a saline and therefore sapid feel on the finish and, above all, a magnificent floral bouquet on the nose.
The soil is cultivated exclusively with our four Comtois horses, and treatments are carried out with our caterpillar ploughs, so that no tractor enters the plot. Vinification is carried out without the use of pumps or sulphites, and the grapes are harvested whole, except in years of frost or hail. 90% of the cuvée is matured in Burgundy barrels of several wines, and 10% in new barrels, for 14 to 18 months.

Après un hiver doux et un mois de Mars humide, nous démarrons la saison en vert mi-Avril avec un débourrement lent dû aux températures plutôt fraiches, mais sans risque de gel. La vigne pousse lentement en Mai, ce qui nous permet de réaliser un ébourgeonnage bien maîtrisé, et c'est important, car nous assistons à une importante sortie de raisins. La floraison arrive tout début Juin, accompagnée par une montée des températures. Comme en 2022, la pression maladies se porte plus sur l'oïdium et principalement sur les Chardonnay. Comme d'habitude, nous gérons cela par des pulvérisations de lait écrémé au lieu du souffre. Juillet connaît des records de température mais aussi des pluies orageuses très localisées, ce qui évite le stress hydrique et permet au raisin de peaufiner sa maturité, lentement, car Août démarre avec des températures automnales. Les vendanges s'étalent du 5 au 13 Septembre, avec des conditions caniculaires qui nous obligent à ceuillir le matin uniquement. Après un tri sévère, nous pouvons vinifier les Pinot-Noir en vendanges entières. Les vins sont surprenants de fraîcheur et de typicité malgré ce millésime très chaud.
